- Variations:
- Use any sturdy cheese it’s a must to hand. Smoked cheese works very nicely as does a combination of flavoured cheese and plain Cheddar.
- Add some chopped wild garlic when it’s in season, or chives.
- Add chopped spring onions.
- Add crispy fried bacon or smoked lardons for a cheese and bacon breakfast scone.

Elements
- 450g self elevating flour
- 1 teaspoon English mustard powder

Directions
1. Pre-heat oven to 225C/450F/Fuel mark 8. Line a big baking sheet with baking paper.
2. Rub the butter into the flour till it resembles breadcrumbs then add the mustard powder, grated cheese and bicarbonate of soda. Combine nicely earlier than pouring the kefir in. Combine till it’s gentle and sticky, then end up onto a nicely floured board.
